Ice Cream Truffles

So i’ve started to be a bit more strict with my diet, purely as summer is around the corner. No more alcohol for me and limited cheat meals. I like making changes to my diet, purely so I can experiment what works for me, I’m still quite new to all this so I think it helps!

I’ve been coming up with macro friendly treats that I can enjoy whilst being a bit more strict. These are delicious and so easy to make; thank you WheyHey for the ice creams!

Ingredients

  • 2 tbsp of peanut butter
  • 2 tbsp of coconut oil
  • 1 bar of dark chocolate
  • whey hey ice cream – banoffee flavour

Method

  1. Spoon out the ice cream into small balls and place on a tray lined with baking paper. Freeze.
  2. Add the peanut butter and 1tbsp of coconut oil to a heat proof dish and microwave. stir until completely melted.
  3. Take the ice cream from the freezer and individually dip into the peanut butter. Place back onto the tray and into the freezer to set.
  4. Add the dark chocolate and 1tsbp of coconut oil to a heat proof dish and microwave. stir until completely melted.
  5. Take the ice cream from the freezer and individually dip into the chocolate. Place back onto the tray and into the freezer to set.
  6. Top with nuts, freeze dried fruit or more chocolate! Yum!
