Christmas treats

Merry Christmas Eve All!! It’s our family tradition that we have a buffet every christmas eve. So I wanted to make something for the buffet, which was Christmassy, macro friendly and delicious.

These are so simple to make and require no cooking.

Ingredients 

For the Christmas Trees 

  • 1 tbsp of spirulina
  • 2 cups of gluten free rice puffs
  • 5 sugar free marshmallows
  • small bar of dark chocolate

For the Christmas Puddings

  • 1 bar of dark chocolate
  • 2 cups of puffed rice
  • 4 marshmallows
  • 4 marshmallows for the topping

Method

For the Christmas Trees

  1. In a microwaveable bowl add the marshmallows and cook on a high for 2 minutes.
  2. Remove the bowl, add the puffed rice, spirulina and mix together
  3. Once the mixture has binded form individual triangles
  4. Once formed add a square of chocolate to the bottom to act as the tree trunk.
  5. Decorate the trees however you wish with sweets or icing

For the Christmas Puddings

  1. Add water to a saucepan then place a heat proof dish over the top and melt the bar of dark chocolate.
  2. Once melted, remove from the heat.
  3. In a microwaveable bowl add 4 marshmallows and microwave for 1 minute.
  4. Once melted, add the chocolate, puffed rice and combine.
  5. Form the mixture in small balls.
  6. Melt the rest of the marshmallows in the microwave and spoon the mixture on top of each ball.
  7. Enjoy!
