Chicken and sweet potato curry with cauliflower rice

Eating clean is hard. There’s no two ways about it. It’s hard work, some days it’s bland and some days you get fed up of eating the same thing. But it’s important to learn how to use the ingredients you have to make a tasty healthy meal.

This is why this chicken curry and rice is a great way to mix up your usual meals without any guilt.

Ingredients

For the Chicken Curry 

  • 2 chicken breasts
  • 2 sweet potato, skin peeled and chopped into cubes
  • 3/4 tsp of garam masala
  • 1tsp paprika
  • 1½ tsp turmeric
  • 1 tbsp red chilli flakes
  • small cup of water
  • 2tbsp of coconut oil
  • 1 red chilli
  • 2tsp cumin seeds
  • 2 medium onions, peeled and chopped into cubes
  • small handful of fresh coriander
  • 1 tin of tomatoes
  • thumb of ginger, peeled and chopped

For the Cauliflower rice

  • 1 cauliflower
  • handful of coriander

Method

For the Chicken Curry 

  1. Heat the coconut oil in a large pan, until hot. Add the cumin seeds and fry, then add the onions and garlic fry until slightly golden brown.
  2. Drain the tinned tomatoes and add to the pan but keep the juice separate.
  3. To the pan, add the ginger, chilli flakes, chillies and all of the spices.
  4. Add the sweet potato and chicken, then continue to cook on a high heat.
  5. Once the meat has browned and some of the liquid has evaporated add the juice off the tin tomatoes and water.
  6. Simmer over a medium heat for 10-15 minutes.

For the rice 

  1. Cut the leaves and stem off the cauliflower and roughly chop into chunks
  2. Place the cauliflower in a food blender and blend in a high speed until broken down and a rice like texture is formed
  3. place the cauliflower rice in a bowl and cover with cling film and poke a few holes in the top
  4. place in the microwave on a high heat for 7 minutes
  5. roughly chop coridaner and fold into the rice once cooked
